Autumn is the time to reach for plums. The fruits are ripe, sweet-sour and juicy. Combined with the fluffy, cheesy interior, they create a dessert that smells beautiful, tastes great and is simply hard to resist. Easy to prepare and at the same time appetizing looking, it will work just as well with afternoon coffee as it does for a family, gala dinner. Everyone can make a quick cheesecake with plumseven if baking is not your hobby.

It’s hard to find a more perfect pair than plums and cheese. Their flavors complement each other. The sweetness and creamy texture of cottage cheese soften the juiciness and sour note of the fruit. This combination has been present in Polish cuisine for yearsespecially in baked goods, dumplings and pancakes. Plums add freshness, lightness and even more flavor to the dessert, and the cheese mass gives it a velvety consistency.

Cottage cheese is a source of protein, calcium and B vitamins, which are necessary for the proper functioning of the nervous system and strong bones. It also provides valuable phosphorus and magnesium, which support concentration. Plums, in turn, have cleansing properties and support digestion thanks to their high fiber content. They also contain antioxidants that delay the aging process of the body and strengthen immunity, which makes them an excellent fruit for the colder months.

The combination of cheese and plums can be used in many ways in the kitchen. They can be found in classic cheesecakes, tartlets and fruit casseroles. Their flavors go perfectly with cinnamon, vanilla and cardamom, which add a warm aroma to desserts.

Cheesecake with plums is a cake that bakes quickly and always turns out well. I like to come back to this recipe myself, because the cheese mass turns out amazing – light, fluffy, with perfect sweetness. What’s more, the same mass recipe can be used for cakes with other fruits, for example raspberries, peaches or blueberries. Its taste and perfect consistency make everyone ask me for the recipe. So it’s worth writing down the idea for simple cheesecake with plums and always have it at hand.

Quick cheesecake with plums – recipe

Ingredients:

Shortcrust pastry:

  • 250 g of wheat cake flour,
  • 125 g of powdered sugar,
  • 125 g of butter 82%,
  • egg size L,
  • grated zest of 1 lemon,
  • 1-2 teaspoons of lemon juice.

Cheese mass:

  • 300 ml of 2% milk,
  • 100 g of fine sugar,
  • a package of vanilla sugar,
  • package of vanilla pudding (40 g),
  • juice squeezed from half a lemon.
  • 250 g of semi-skimmed cottage cheese (milled three times).

Additionally:

  • butter to grease the tart pan,
  • 300 g plums,
  • optionally cinnamon to spice the fruit.

How to do it:

Prepare the pudding. Measure 200 ml of milk and pour it into the pot. Also pour sugar and vanilla sugar into the container. Start heating over medium heat, stirring occasionally to dissolve the sugars. Mix the custard powder in the remaining milk. Pour the mixture into the boiling milk and cook, stirring constantly, until the pudding thickens. Cover with foil on contact (to prevent a skin from forming) and set aside to cool completely.

Start making shortcrust pastry. First, sift the flour and powdered sugar onto a clean kitchen counter or pastry board. Cut the well-chilled butter into smaller pieces and add it to the flour. Wash the lemon and grate the peel (only the yellow part, without albedo). Pour in the squeezed lemon juice and add the egg. Knead the dough as quickly but thoroughly as possible. Form it into a ball, flatten it slightly with your hands and wrap it in foil. Put in the fridge for about 30 minutes.

In the meantime washed cut the plums cut into halves and remove the seeds. Cut the halves into thicker slices. Set aside for later. Make the cheese mass. Grind the cottage cheese three times to a velvety consistency. Mix the cold pudding with the juice of half a lemon and ground cottage cheese. Set aside the mass for later.

Assemble the cheesecake with plums. Take the cooled dough out of the fridge, remove the foil and roll it out into a thin layer (max. 0.5 cm). Grease a tart tin with a diameter of approx. 25 cm thoroughly – on the bottom and edges – with butter. Spread the dough on the bottom and sides of the dish. Prick it in several places with a fork. Place the cheese mass on the dough (level it out) and put the plums on it (as in the photo, in a circle, one overlapping the other). Lightly press the fruit into the mixture. If you like, you can sprinkle them lightly with cinnamon.

Bake a cake. Put the form in the oven preheated to 180 degrees Celsius for about 45 minutes. After this time, remove the cheesecake and set aside to cool. Serve chilled in the refrigerator.
