Once, when I got bored with the classic vegetable dish, I decided to experiment a bit and that’s how this recipe was created. Salad with sausage it’s delicious and so filling that even my husband eats it. We like to eat it for dinner, I also pack it for a second breakfast for work.
- 3 large potatoes,
- 3 eggs,
- 200 g of ham or Krakow sausage,
- 1 fresh English cucumber,
- 200 g canned peas.
Dressing:
- 4 tablespoons of mayonnaise,
- 2 tablespoons of mustard,
- 2 tablespoons of lemon juice,
- ½ teaspoon of salt,
- ½ teaspoon of black pepper.
Additionally:
- salt for cooking potatoes,
- vinegar for cooking eggs.
Boil the jacket potatoes with salt and hard-boil the eggs with a tablespoon of vinegar. Cool them completely and then gently peel them.
Cut all the cooked and cooled ingredients, as well as the sausage and fresh cucumber, into very small and even cubes, approximately 0.5 cm in size.
Drain the peas from the brine and dry them. Add it to the vegetables and mix everything together.
Prepare the dressing by mixing all the ingredients. Pour the prepared sauce over the salad and mix well until all products are well covered.
Cover the bowl with plastic wrap and place the sausage salad in the refrigerator for at least 2 hours. Season with salt and pepper if necessary.
Store leftovers in the refrigerator in an airtight container and use within 3 days.
