Vitamin salad is a real treasure trove of vitamins that delights not only with its freshness and lightness, but also with its rich nutritional value. Thanks to presence butter lettuce, corn salad, cucumber, radish and dillprovides the body valuable vitamins – especially A, C, K and B vitamins – and minerals such as potassium, magnesium or iron. Vitaminka salad is the perfect choice for a light lunch, an addition to dinner or a healthy snack. It is a perfect meal for people who care about their weight, vegetarians and anyone who wants to enrich their diet with fresh and natural ingredients.
Ingredients:
- head of butter lettuce,
- a handful of lamb’s lettuce,
- long greenhouse cucumber,
- a bunch of radishes,
- 1/2 small onion,
- a handful of dill.
Dressing:
- 3 tablespoons of olive oil,
- a spoon of wine vinegar,
- 1/2 teaspoon Dijon mustard,
- a pinch of sugar,
- 1/2 teaspoon of salt,
- 1/4 teaspoon of black pepper.
Additionally:
- a few basil leaves for decoration.
How to do it:
1) Wash the lettuce thoroughly, dry it and tear it into smaller pieces. Transfer to a large glass bowl and add the previously washed corn salad.
2) Wash the cucumber and cut it into half-slices or cubes.
3) Wash the radish and cut it into thin slices.
4) Chop the onion very finely.
5) Chop the dill and basil.
6) Prepare the dressing by mixing all ingredients in a bowl or jar. The sauce should emulsify and become thicker.
7) Transfer all vegetables to a bowl and mix thoroughly. Pour the previously prepared sauce over everything. Mix and sprinkle with chopped basil.
If you want to prepare the Vitaminka salad in advance, it is best to pour the sauce over it immediately before serving to keep the ingredients crunchy.
