This simple, plant-based dish combines the sweetness of cauliflower with the distinctive, slightly salty accent of capers and the intensity of dried tomatoes. The velvety sauce beautifully coats the florets, and the roasted sesame seeds add a pleasant nutty note and crunch. Cauliflower stewed in tomato sauce it’s perfect as a quick dinner, you don’t need any additional ingredients. Moreover, such a dish is very healthy, it is an excellent source of fiber, vitamins, minerals and antioxidants.
To prepare this recipe, you will need:
- 1 cauliflower,
- 200 ml tomato passata,
- 30 g of dried tomatoes,
- 2 cloves of garlic,
- 1 tablespoon of pickled capers,
- half a teaspoon of oregano,
- half a teaspoon of basil,
- salt and pepper
- olive oil for frying,
- a bit of sesame for sprinkling,
- a little salt and sugar for cooking the cauliflower.
Cut the cauliflower into florets and rinse. Boil water with salt and a little sugar. Add the cauliflower and cook until it is semi-soft.
Heat the olive oil in a large frying pan. Meanwhile, peel and chop the garlic. Throw them in and fry for a while. Add dried tomatoes and cooked cauliflower.
Pour the tomato passata, add capers, oregano and basil. If the sauce seems too thick, add 2-3 tablespoons of water (or a teaspoon of caper liquid). Season with salt and pepper.
Reduce the heat, cover and simmer for 8-10 minutes. Finally, remove the lid and evaporate the sauce so that it coats the florets nicely.
After serving the cauliflower in tomato sauce, sprinkle it lightly with sesame seeds.
