Such potatoes are served in Podhale. Now you can make them at home without any hassle

Although they are associated with Zakopane and the idyllic view of the Tatra Mountains, you can easily prepare highlander-style potatoes at home. All you need are a few ingredients and a bit of patience to feel the taste of the real Podhale region.

These potatoes are the quintessence of highlander cuisine – simple products that, when combined, give an amazing effect. The recipe is enough for a portion for the whole family, and the smell of baking potatoes will attract everyone to the table. Ingredients:

  • 1 teaspoon of pepper,
  • 2 teaspoons of salt,
  • 3 shallot bulbs,
  • 8 large potatoes,
  • 12 slices of smoked bacon,
  • 100 ml of sour cream 18%,
  • 120 g of butter,
  • 200 g oscypek cheese,
  • 250 g of yellow cheese (e.g. cheddar),
  • a bunch of chives.

It’s a combination of flavors and aromas that always works. Bacon adds character, and oscypek cheese and cream make the inside of the potatoes creamy and filling.

Scrub the potatoes thoroughly, but don’t peel them. Prick each one with a fork and wrap in aluminum foil. Bake in the oven for an hour at 200 degrees Celsius. When they are soft, take them out, let them cool slightly and cut them lengthwise. Gently hollow out the centerand put the pulp into a bowl.

Na patelni fry the baconuntil it becomes crispy. Chop the chives and onion, grate the oscypek cheese. Add butter, cream, half of the bacon, half of the chives, onion and grated oscypek cheese to the potato pulp. Season with salt and pepper and mix everything thoroughly.

Fill the potatoes again with the stuffingplace them on a baking tray lined with baking paper and sprinkle with grated yellow cheese. Place in the oven for another 10-15 minutes until the top is beautifully baked. Serve the finished potatoes hot, sprinkling with the remaining bacon and chives.
