Pasta with pumpkin and bacon is a combination of the creamy delicacy of mascarpone, aromatic bacon and the natural sweetness of pumpkin. The whole thing is enriched with parmesan and spices, creating a filling and warming dish perfect for autumn dinners. Be sure to make a larger portion, the family will definitely ask for more.
To prepare this recipe, you will need:
- 350 g fusilli macaroni,
- 400 g pumpkin pulp,
- 150 g raw smoked bacon,
- 1 large onion,
- 100 g mascarpone serka,
- 100 g of grated Parmesan cheese,
- half a teaspoon of dried parsley,
- half a teaspoon of ground sweet pepper,
- half a teaspoon of granulated garlic,
- salt and pepper to taste,
- rapeseed oil for frying.
If you want the dish to be even more filling, you can add a chicken breast fried in olive oil.
Peel the pumpkin and cut into small cubes. Chop the onion and cut the bacon into thin strips.
Boil salted water in a large pot. Add the pasta and cook according to the instructions on the package. 5 minutes before the end of cooking, add the pumpkin cubes and cook together until the pasta is al dente and the pumpkin is soft but still firm. Drain, reserving half a cup of cooking water.
Heat the oil in a large frying pan and fry the bacon until slightly crispy. Add the onion and fry over medium heat. Add mascarpone to the pan and mix until smooth. Season with sweet pepper, granulated garlic, parsley, salt and pepper.
Add pasta with pumpkin to the sauce, pour a few tablespoons of cooking water and mix thoroughly. Simmer for 5-10 minutes. Finally, add the grated Parmesan cheese and combine everything to a uniform, creamy consistency.
