The evening was dark, the wind was blowing throughout the kitchen, and every now and then a creature looked around the corner, asking what was in the oven. At least that’s how it looked from my perspective when I was baking savory cupcakes for a party. Instead of stories about ghosts and haunted houses, it’s better to tell stories about how something delicious can save any meeting. A friend of mine who is organizing a spooky-themed birthday party has already stolen the recipe from me. Because Halloween is the perfect opportunity to experiment a little more in the kitchen. Pumpkin and cheese muffins are the perfect way to surprise your guests with the first bite.
Halloween has become well established in American culture, although it comes from the Celtic festival of Samhain (when spring and summer were said goodbye and the darker part of the year was welcomed). It’s a celebrated holiday on the night of October 31 to November 1during which children and adults dress up as ghosts, witches or vampires and go from door to door asking for sweets. The slogan “trick or treat”, or “trick or treat” in Polish, is known all over the world. Today it is no longer based on beliefs – in the United States it is simply a day of fun, full of laughter, colors, pumpkin decorations and sweet snacks.
In Poland, Halloween does not have such deep rootsbut young people eagerly use the opportunity to meet friends and watch a scary movie. Themed snacks are prepared for a house party. The most popular items include witch fingers with almond nails, mummy sausages in puff pastry, mini pumpkin cheesecakes and bat-shaped cookies. Sometimes it’s worth surprising guests with something they don’t expect – for example savory muffins.
Pumpkin and cheese muffins look appetizing, but they also taste great. Pumpkin gives them a delicate sweetness, cheese – a creamy consistency, and spices – a light piquancy. You don’t have to prepare them for Halloween anyway – They are perfect as a warm snack for any party. They can be served with garlic sauce, spicy ketchup or a yogurt-based herbal dip. Baked vegetables also go well with them, e.g. peppers, zucchini and eggplant. If you serve them with muffins, they will become an elegant appetizer. They seem like small cupcakes, but they make a big impression.
Savory cheese muffins also contain a very autumnal ingredient, i.e. pumpkin. The vegetable can surprise you, not only in soup or cake, but also in savory muffins. Preparing a snack for Halloween (and beyond!) is really simple. Just combine wet and dry ingredients, pour the dough into molds and bake. As a result, it is created fluffy, soft, moist cake with a slightly sweet hint of pumpkin and a distinctive cheese flavor (and cheese crispy dumplings). The addition of cayenne pepper makes it cupcakes are great to warm you up on cold days. This is a recipe worth keeping and using on many occasions with family and friends.
Savory cheese muffins – recipe
Ingredients (for 12 pieces):
Wet products:
- 300 g ,
- 100 ml of natural yogurt,
- 50 g butter 82%,
- 2 eggs.
Dry products:
- 250 g of wheat cake flour,
- 1.5 teaspoons of baking powder,
- 2 tablespoons of brown sugar,
- a teaspoon of cayenne pepper,
- 1/2 teaspoon of salt.
Additionally:
- 150 g of grated yellow cheese (e.g. Emmental),
- butter to grease the muffin tin.
Preparation method:
Step 1
Start by preparing the wet part of the mixture. Melt the butter in a pot and set aside to cool. Pour cool into a bowl. Also add pumpkin purée (it is best to prepare it at least the day before) and natural yogurt. Mix everything together thoroughly using a whisk.
Step 2
Add the eggs to the bowl, beat again until combined and set aside the wet part of the mixture for later.
Step 3
Now it’s time for dry products. Sift the flour and baking powder into a clean, larger bowl. Add salt, cayenne pepper and sugar. Mix everything together with a spoon until combined.
Step 4
Pour the liquid mixture into the dry ingredients.
Step 5
Mix both masses together with a kitchen whisk to form a smooth and uniform dough. If you want, you can use the mixer on low speed. Make sure there are no lumps of flour left in the dough.
Step 6
Grate the yellow cheese. Add most of it to the bowl with the dough and mix well. Leave only about 2 tablespoons of grated cheese to sprinkle on top of the cupcakes.
Step 7
Grease the muffin tin well with butter (bottom and edges). Add the dough with a spoon – almost to the full height of the cavity.
Step 8
Sprinkle the top of each muffin with the remaining grated cheese. Put in the oven preheated to 180 degrees Celsius for 20-25 minutes. The top should crisp up nicely.
Step 9
After this time, carefully remove the cupcakes and place them on a plate or oven rack to cool completely. You can serve such savory cupcakes for any occasion.
Step 10
Decorated appropriately, they can be a delicious Halloween snack. Just pack them in paper molds imitating spider webs, decorate them with olives imitating spiders or cover them with “bloody” ketchup.
