Stuffed zucchini and peppers are a classic among dinners. They taste great with meat, rice and vegetable stuffing. In the article below, we will tell you how to make the autumn version of this dish. Stuffed pumpkin it is easy to prepare, tastes great, and looks extremely impressive on the table. They are best for making stuffing forest mushroomsbut if you don’t have any on hand, you can choose mushrooms that you can get in any store. The dish is colorful and will surely please all your household members.

To prepare this recipe, you will need:

  • 2 Hokkaido pumpkins,
  • 200 g of rice,
  • 500 g of forest mushrooms,
  • 1 large red pepper,
  • 1 bunch of spring onions (with chives),
  • 2 cloves of garlic,
  • 125 ml of vegetable broth,
  • 100 g of sour cream (18%),
  • 150 g parmesan cheese,
  • 1 teaspoon of thyme,
  • 1 teaspoon of oregano,
  • a pinch of nutmeg,
  • salt, pepper (to taste),
  • sunflower oil (for frying).

Cook the rice until loose – in 400 ml of lightly salted water. Cook over low heat, covered. When the rice has absorbed most of the water, turn off the burner and leave covered for another 10 minutes.

Clean the mushrooms and cut them into smaller pieces. Remove the seeds from the peppers. Cut the flesh into cubes. Peel the spring onions and cut them into cubes. Chop the chives. Lightly crush the garlic cloves, peel them and chop them.

Wash the pumpkins, cut them in half and remove the seeds and fibers.

Fry the onion in oil. When it becomes translucent, add the peppers. When the peppers soften a bit, add the garlic to the pan, and after a while, the mushrooms. Fry the mushrooms until soft. Season the stuffing in the pan with thyme, oregano, nutmeg, salt and pepper.

Pour the broth into the pan. Simmer the stuffing until the broth evaporates. Grate the parmesan on the fine holes of a grater. Mix into the filling along with the cream. Combine the stuffing with rice and chives. If you want, additionally season with salt and pepper.

Fill the pumpkin halves with the stuffing. Place the pumpkins on a baking tray lined with paper. Place in the oven preheated to 200°C. Bake for about 40-45 minutes – until the pumpkin is soft.
