It is a common belief that on St. Martin’s Day, there must be a goose on the table. This results primarily from an old legend in which Martin, wanting to protect himself from becoming bishop of the city of Torus, he hid in the goose house from the church dignitaries who were looking for himmi. The birds then started honking loudly, revealing the man’s hiding place. Thanks to this, he was found and later appointed as a new bishop. Because of this, it became common saying “The best goose for St. Martin’s Day”.
This saying is also reflected in taste. Geese are bred from spring to autumn, which is why around November 11, their meat is the tastiest. For this reason, it is easiest to get goose from the beginning of November to the middle of it.
