Potato cake is a characteristic dish of eastern Poland, especially Podlasie, Lublin and Suwałki regions. It is a simple, peasant dish, derived from the tradition of using cheap and easily available ingredients. The base is raw, grated potatoes, onion, eggs and spices. Cravings or smoked bacon are also added to it to make it more distinctive. Baked in a bread oven or cast iron pan, it gained a crispy, golden crust and a soft center. Potato cake used to be an everyday dish, today it is back on the tables in modern versions, including: with mushrooms, herbs and vegetables.
Ingredients:
- 300 g smoked bacon,
- 2 kg of type B or C potatoes,
- 2 medium onions,
- 2 eggs,
- 4 tablespoons of wheat flour,
- 2 tablespoons of herbal pepper,
- 2 teaspoons of salt,
- a teaspoon of black pepper.
Additionally:
- butter to grease the form,
- breadcrumbs to sprinkle the form.
How to do it:
Prepare the ingredients. Wash the potatoes and peel them. Also peel the onion.
Grate the potatoes and onion using the smallest grater. Alternatively, you can use a food processor with a cutting disc. Place the grated vegetables in a strainer and remove excess liquid by squeezing the mixture with your hand.
Cut the bacon into cubes of about half a centimeter and fry it over low heat until lightly browned. Use a dry pan.
In a large bowl, combine potatoes, onion, bacon with rendered fat, eggs, flour and spices. Mix everything until the ingredients are completely combined and a uniform mass is formed.
Grease the baking tin with butter and sprinkle with breadcrumbs. Fill it with potato mass.
Put the potato cake in the oven preheated to 180 degrees Celsius for 80 minuteson the lower shelf of the oven. 20 minutes before the end of baking, reduce the temperature to 150 degrees Celsius and cover the dish with aluminum foil.
Remove the dish from the oven and set aside for 10-15 minutes. You can serve it straight from the tin, but you can also turn the tin upside down and gently remove it onto a plate.
Serve the cake warm or cold. Store leftovers in the fridge and use within 3 days. Reheat in a pan.
