Plums are fruits that are perfect for desserts. From classic, simple cakes, through to quick muffins that you can make in just a few moments. Muffins with plums and spices are a great way to use up fruit left over from weekend baking or preserves.
They are simple to make and extremely aromatic. The muffins come out warm, fragrant and moist with plum juice. Such muffins are perfect for dessert, but also for a sweet breakfast, with coffee or as a snack for university, school or work.
Ingredients:
- 250 g cup of wheat flour,
- 150 g of granulated sugar,
- 150 ml of milk,
- 120 g of butter,
- 5 ripe plums,
- 2 eggs,
- a teaspoon of cinnamon,
- a teaspoon of baking powder,
- a teaspoon of vanilla,
- 1/2 teaspoon of salt,
- 1/8 teaspoon nutmeg.
How to do it:
- Melt the butter and set aside to cool.
- In a large bowl, mix sugar, cinnamon, flour, baking powder, salt and nutmeg. Set aside.
- In another large bowl, whisk together the eggs, vanilla, milk and melted, cooled butter.
- Mix the egg mixture into the flour using a rubber spatula.
- Wash the fruit and remove the seeds, then cut them into small pieces.
- Line a muffin tin with muffin cups or grease it with butter. Pour 2 tablespoons of dough into each hole, then spread half of the fruit evenly. Cover them with another two tablespoons of the mixture.
- Place the other half of the fruit on top of the cupcakes.
- Put the plum muffins in the oven preheated to 180 degrees Celsius and bake for 15-20 minutes, until the stick is dry.
- Remove the cupcakes and let them cool for 5-10 minutes, then transfer them to a wire rack. Serve once completely cooled.
Store them at room temperature in a tightly closed container for 2-3 days. Alternatively, store them in the fridge and use within 5 days. You can also freeze them for 2 months.
