If you are looking for an idea for a healthy meal, cottage cheese and zucchini wrap will be an excellent proposition. The base is, of course, grated zucchini. It’s a vegetable it is easily digestible and low-calorie (16 kcal per 100 g)will be perfect for people on a slimming diet, as well as children and seniors. It is also source of dietary fiberwhich is necessary for proper digestion, improves intestinal peristalsis and their microflora, increases metabolism, and ensures satiety after a meal. It also helps maintain proper blood sugar and cholesterol levels. Zucchini contains plenty of vitamins A, B, C and K, as well as minerals, potassium, magnesium and iron. Two to prepare cottage cheese and zucchini wrapsyou will need:
- 1 zucchini,
- 1 package of cottage cheese,
- 2 eggs,
- salt and pepper to taste,
- 1/3 teaspoon of oregano,
- 1/3 teaspoon basil,
- pinches of chili flakes,
- 1 clove of garlic,
- optional: 50 g of grated cheese, e.g. Parmesan, cheddar.
Preparation:
- Start by grating the zucchini, then sprinkle it with a pinch of salt, mix and set aside for a quarter of an hour. Squeeze excess water from it.
- Crack and beat the eggs in a bowl, add cottage cheese and grated zucchini. Season the mixture with pepper, oregano, basil and chili flakes. You can also add grated cheese. Mix everything.
- Line a baking tray with baking paper. Form two flat, round patties.
- Bake for approx. 35-40 minutes (the last 10 minutes with convection) in an oven preheated to 180 degrees, until the pancakes are golden.
Such pancakes can be eaten on their own, for example with plain never tzatziki. To prepare it, you only need grated cucumber, a few tablespoons of Greek yogurt, pressed garlic, salt and pepper.
You can also spread it on the wraps cream cheese, place a slice of smoked salmon and green cucumber on them, and sprinkle everything with dill.
You can also treat cottage cheese and zucchini wraps as bread for regular sandwiches and serve them with lettuce, ham and tomato.
