If we want to use the leftover groats after dinner, we can prepare a delicious dish based on it. We’re talking about kaszotto with tomatoes, eggplant and mozzarella. So you only need a moment to prepare a tasty dinner and at the same time not waste food from the previous meal. Here’s what you need to make this meal:

  • 2 cups of cooked barley,
  • 1 mozzarella,
  • 10 cherry tomatoes,
  • 1 small eggplant,
  • 1 small pepper,
  • 1 clove of garlic,
  • 0.5 cups of old Gouda cheese,
  • 1 onion,
  • 1 teaspoon of Provençal herbs,
  • 1 teaspoon of dried basil,
  • 1 teaspoon of oregano,
  • 2 tablespoons of olive oil,
  • fresh basil for decoration,
  • sun,
  • pepper.

We start preparing the meal by cutting the eggplant into cubes, salting it and setting it aside for a while to release the juice. Then dry it with a paper towel. Meanwhile, heat the olive oil in a frying pan add chopped onion and garlic until translucent. We also add diced peppers and eggplant. Fry for a few minutes until everything is golden brown.

Plus add cooked groats, herbs and spices. Mix everything and add cherry tomatoes cut in half. Fry the dish for another 3 minutes. Place pieces of mozzarella on top of the dish, sprinkle with grated cheese and cover the pan. Heat everything over low heat so that the cheese can melt. Serve the dish hot and decorated with fresh basil.
