Seniors often struggle with too high blood sugar. Type 2 diabetes is also common in this social group, which requires seniors to follow a special diet and avoid simple carbohydrates that quickly raise sugar levels. Buckwheat flakes have a low glycemic index of 40-50. Moreover, the presence of a natural alpha-amylase inhibitor in the flakes slows down the breakdown of starch into glucose, thanks to which they stabilize blood sugar levels.

The second reason why seniors should reach for buckwheat flakes is to protect the circulatory system. This social group has an increased risk of heart attack, stroke and atherosclerosis. Regular consumption of buckwheat flakes lowers LDL cholesterol levels. In turn, the content of antioxidants is especially important rutin and quercetin strengthens blood vessels and protects them from damage by improving their elasticity, which also contributes to reduce the risk of atherosclerosis, heart attack or stroke.

The preparation of buckwheat flakes is similar to that of oat flakes. Just pour warm water or milk – cow or plant – in a 1:2 ratio and leave for a few minutes. The petals will absorb the liquid and soften. You can serve them with a spoon of honey and fruit. Bananas, raspberries, blueberries and blackberries go particularly well with them. A pinch of cinnamon will complement the taste.
