Currently, there are many ways to store food, but some of them deprive fruit of some nutrients, and others, e.g. freezing, make them lose their elasticity and often have a slightly worse taste. That is why freeze-drying is becoming more and more popular.

This process involves freezing the fruit (approx. -40 degrees C) and lowering the pressure, which allows the water to turn directly into steam, and in the final stage, the fruit is dried at a higher temperature. Thanks to this, the products retain most of the vitamins and minerals, including fiber and antioxidants. They also do not lose their taste, aroma and color. They become light, crunchy, and have a long shelf life – and they do not contain any preservatives.

Removing the water from fruit also makes them an ideal snack for winter, when some fresh seasonal products are difficult to buy – and when available, they often contain preservatives to prevent them spoiling during a long journey. It is also worth remembering that freeze-dried fruits do not require washing or peeling – they can be eaten immediately or added to other dishes.

Sometimes you can also buy freeze-dried mango, pear, cranberry or plum. Fruits that are available only in a specific season are very popular, including: cherries. They are one of the healthiest choices when it comes to freeze-dried products. They will perfectly complement the diet of seniors and others. They contain a lot of minerals and vitamins that support the proper functioning of, among others: digestive system.

Moreover, these fruits are approximately 80 percent they consist of water – freeze-drying gets rid of it, which is why 100 g of freeze-dried cherries (approx. 350 kcal) contain much more nutrients, including: approx. 70 g of carbohydrates, 9 g of fiber and 6 g of protein.
