Not everyone likes St. Martin’s croissants. However, if we want to eat a sweet snack similar to the traditional one on November 11, we can prepare an alternative filling for croissants. We show you how to make yeast croissants with aromatic filling and a sweet finish.

If we don’t like them because of the white poppy seeds, we can replace them with a sweet snack with a different filling. Croissants with nut filling and icing are perfect for this role.

They are equally tasty and do not contain white poppy seeds. To prepare them we will need the following ingredients. To start, we will need to equip ourselves with:

  • 100 g of fresh yeast,
  • 1 glass of warm milk,
  • 2 tablespoons of sugar,
  • 3 tablespoons of wheat flour.

To prepare the cake, we need to prepare:

  • 1 kg of wheat flour,
  • 1 cup of sugar,
  • 1 cup of warm milk
  • 4 eggs
  • 150 g butter.

To make the filling, we will need:

  • 300 g walnuts,
  • 0.5 cups of hot milk,
  • cane sugar (amount to taste).

However, to prepare the icing, we need: equip yourself with 1 cup of powdered sugar and 1 egg white. In addition, you should prepare some nuts that will be used for decoration.

We start preparing delicious dishes by preparing the leaven. Grind the yeast with sugar, flour and warm milk. Cover them with a cloth and set aside in a warm place for half an hour. Meanwhile, melt the butter and cool slightly, and beat the eggs with sugar until fluffy. Add to flour risen yeast, as well as eggs beaten with sugar and cooled butter. Gradually add warm milk and knead the dough. Cover them and set aside to rise for an hour and a half.

While waiting for our dough to rise, we can prepare the filling. Grind the walnuts, e.g. with a blender, add cane sugar, then gradually pour in the hot milk and mix the mixture thoroughly. The filling should be slightly thick.

Once the dough has risen, roll it out on a board sprinkled with flour. Cut into triangles and put a portion of filling on each of them and roll up to form croissants.. Place them on a baking tray lined with baking paper. Put in the oven preheated to 180 degrees Celsius for about half an hour. Finally, prepare the icing by mixing the egg whites with powdered sugar for a few minutes. When it has the appropriate density, decorate the croissants with it and sprinkle them with finely chopped nuts.
