Velvety, fluffy chocolate cream is a dessert that every sweet lover dreams of. Light as a feather and at the same time intensely chocolatey. It can be used in many ways. It will work great as cake or pastry massbecause after cooling it hardens beautifully, retaining its delicacy. It will also be simple a stand-alone dessert – just a few tablespoons of cream in a cup, with the addition of e.g. nuts, coconut flakes or fruit. You can also spread it on pancakes or waffles if you like sweet breakfasts. This is a great way to get something sweet quickly.
Ingredients:
- 250 ml whipping cream 36%,
- 250 ml of milk,
- 200 g of good quality dark or semi-sweet chocolate,
- 50 g sugar,
- 20 g cocoa powder,
- yolk,
- a teaspoon of vanilla extract,
- 1/2 teaspoon of salt.
How to do it:
- In a medium-sized pot, mix sugar, cocoa and salt with a whisk.
- Pour in the milk and beat until all ingredients are combined. Then add the vanilla extract and egg yolk and mix everything again.
- Place the pot over medium heat and stir until the mixture begins to steam and bubble slightly. Remove it from the heat and add the crushed chocolate. Stir until dissolved.
- Allow the mixture to cool to below room temperature, stirring with a whisk approximately every 10-15 minutes. The mass should be thick, but not completely hard. If this happens, you will need to gently heat it again until it dissolves.
- Beat the cold cream with a mixer until soft peaks form. Add half of the whipped cream to the chocolate mass and mix gently with a spatula. When the color of the cream is completely uniform, add the second half of the cream and mix again.
- Place the homemade chocolate cream in the fridge to harden slightly. You can use it as a stand-alone dessert or as an element of cakes, cookies and other desserts.
