Apple pie, but differently. I even prefer this recipe to the classic one

Apple pie with semi-shortcrust pastry is a faster and simpler version of the classic dessert, which is characterized by the same unique taste and juiciness.

Cake:

  • 500 g of wheat flour,
  • 2 eggs, size L or XL,
  • 150 g of butter,
  • 2 tablespoons of sour cream 18%,
  • 200 g of sugar,
  • 1 package of vanilla sugar,
  • 2.5 teaspoons of baking powder,
  • 1 pinch of salt.

Filling:

  • 6 apples,
  • 2 tablespoons of brown sugar,
  • 2 tablespoons of lemon juice,
  • 1 teaspoon of cinnamon,
  • ½ teaspoon of vanilla extract.

Additionally:

  • chocolate shavings for sprinkling.

Prepare the dough.

Sift the flour into a bowl with the baking powder. Add finely chopped cold butter and a pinch of salt.

Rub the butter with the flour until it resembles wet sand.

Pour sugar and vanilla sugar into a separate bowl. Add the eggs and mix at high speed for a few minutes until light and fluffy.

Transfer the egg mixture to the bowl with the flour; add cream. Mix everything with a spatula and then you can use a mixer with hooks to knead the yeast dough.

Form two balls of dough, wrap them in cling film and put them in the fridge for at least 30 minutes.

Prepare the filling.

Peel the apples and remove the seeds. Cut them into cubes and put them in a pot over medium heat. Add cinnamon, vanilla, sugar and lemon juice. Cook everything covered for 10 minutes, stirring occasionally.

Remove the mixture from the heat and set aside to cool.

Assemble the dough.

Take out one ball and roll it out into a 25×35 cm cake. Transfer it to a baking tin of the same dimensions, lined with baking paper.

Then spread the apple filling evenly.

Roll out the second ball of dough as well, but tear them into small pieces and spread them on top of the dough, quite messily – this will give a fantastic effect.

Put the cake in the oven preheated to 175 degrees Celsius and bake for 25-30 minutes until the top is nicely golden.

Remove the apple pie with semi-shortcrust pastry and cool completely. Serve it cold, sprinkled with chocolate shavings.
