Preparation of tomato juice start by scalding the fruit and removing the skin. Then cut them into pieces, put them in a pot and cook the tomatoes over low heat for 15-20 minutes until they fall apart.
Then rub them through a sieve or blend with a blender to obtain smooth juice. Add water and a few drops of lemon, heat again and pour into sterilized jars. Tomato juice tastes best with the addition of carrots and celery.
