Chicken fillets in creamy sauce. An idea for Saturday dinner

Cowboy style chicken it is a tasty, filling and warming dish. It will appeal to lovers of meat and sweet and salty flavors, sweet corn contrasts perfectly with the distinctive bacon. You will make the sauce based on broth, add garlic, shallots and chili peppers, which will give the dish a spicy aroma. Mascarpone cheese is responsible for the creamy consistency, while fresh parsley adds a slightly refreshing note.

To prepare this recipe, you will need:

  • 500 g chicken fillets,
  • 2 cloves of garlic,
  • small shallot,
  • a small can of canned corn,
  • 150 g raw smoked bacon,
  • 200 g mascarpone,
  • 200 ml of milk,
  • 100 ml of vegetable broth,
  • half a teaspoon of ground cumin,
  • half a teaspoon of smoked sweet paprika,
  • small chili pepper (optional),
  • a few sprigs of fresh parsley,
  • salt and pepper to taste,
  • olive oil for frying.

You can serve the finished dish with boiled potatoes, rice or groats. You can also serve it with your favorite bread.

Cut the chicken fillets lengthwise as many times as possible (due to the thickness of the meat). Thin cutlets should be formed. Sprinkle them with salt and pepper on all sides.

Cut the bacon into small pieces. Throw it into a dry, heated frying pan and fry until the fat melts and the pieces become slightly crispy. Transfer to a plate.

Chop the peeled shallot. Peel the garlic, crush it and chop it finely. If you use chili peppers, chop them very finely.

In the same pan, add a little olive oil. Add the cutlet and fry them on all sides. Add chopped shallot, garlic and finely chopped chili. Fry for a few minutes over medium heat, turning the meat from time to time.

Pour in the broth and milk. Boil. Then add mascarpone, cumin and smoked paprika. Cook over medium heat until the sauce thickens and becomes creamy. Add the drained corn, stir and continue to simmer. Finally, add the crispy bacon.

Before serving, chop the parsley finely. Mix it gently into the cowboy chicken.
