I love simple, home-cooked meals just like this carrots in Masurian style. Sweet carrots, soft potatoes and this delicate, milky sauce with nutmeg. Whenever I think about it, I immediately get hungry.
It’s the perfect addition to dinner, but I also like to eat it as a stand-alone dish, just like that. Carrots prepared this way are very filling and warming. You only need a few ingredients to prepare something as perfect – just like mom’s.
- 600 g carrots,
- 400 g potatoes,
- 250 ml of milk,
- 20 g of butter,
- 1½ tablespoons of flour,
- ½ teaspoon of sugar,
- 1 teaspoon of salt,
- ½ teaspoon of nutmeg,
- pepper (to taste).
Peel the carrot and cut it into small cubes. Pour water into the pot – so that the water is slightly above the level of the carrots. Add sugar, salt and half the butter to the pot.
Peel the potatoes and cut them into small cubes – just like the carrots. Add the potatoes to the pot with the carrots when they are semi-soft. Cook over low heat until the potatoes are soft.
Boil the milk. Pour into the pot with the vegetables. Simmer over low heat until excess liquid evaporates.
In the meantime, prepare a roux with the other half of the butter and flour. Melt the butter in a pan, add the flour and mix. Fry for a while (still stirring) until the flour turns brown.
Add the roux and nutmeg to the pot with the vegetables and mix thoroughly. Simmer everything for a few more minutes – until the dish obtains a thick consistency. Season them with pepper to taste.
