Herring can be prepared in a hundred ways: as pickles, salads or rollmops. Today we propose a unique recipe with the intriguing name “Pastor’s Herring”. They will be a delicious snack on St. Andrew’s Day evening. Even people who don’t like fish will reach for them.
Herring is a real party hit. They are extremely versatile, can be served in many ways and taste good even after a long time spent on the table. Their easy availability and simplicity of preparation mean that they will not take much time in pre-St. Andrew’s Day preparations. On a party table, they work perfectly as a “starter” snack that will attract guests’ attention and disappear faster than other dishes.
Herrings have the advantage that they can be prepared in advance, co they will save you from stress just before the event. If they stay in the marinade longer, they will be even tastier. It is also impossible to ignore their health properties. This is a great choice for an evening that is often full of heavier dishes.
Among the classic St. Andrew’s Day hits, “parson’s herrings” have been dominating for years.. This is an extremely simple recipe that combines many intense flavors. They are perfect both for bread and as a stand-alone, cold addition to a party table.
Ingredients (for about 5-6 people):
- 6 herring fillets à la matias;
- a small jar of pickled mushrooms;
- 1 onion;
- dill or parsley;
- 5 tablespoons of oil;
- 5 tablespoons of vinegar.
Preparation method:
- Soak the herring fillets in cold water for about an hour. After this time, rinse them and cut them into thin strips.
- Cut the marinated mushrooms into strips or cubes, peel the onion and cut into slices, finely chop the dill or parsley.
- In a large bowl, mix the oil and vinegar, add herring, mushrooms, onion and dill. Mix everything thoroughly.
- Place in a jar or bowl, close and put in the fridge overnight to let the flavors mingle.. The priest’s herrings will be perfect the next day. Before the St. Andrew’s Day party, put them on a platter and decorate with fresh dill or parsley.
