Soft on the inside, crispy on the outside. Recipe for the best chocolate cookies

The chocolate cookies they are extremely simple and quick to prepare, although unfortunately they require quite a long cooling period. They are perfect as a sweet snack with coffee or tea. They are pleasantly soft inside and slightly crunchy on the outside. The addition of chocolate melts pleasantly in your mouth.

  • 250 g of butter,
  • 150 g sugar,
  • 150 g of brown sugar,
  • 1 teaspoon of vanilla extract,
  • 2 eggs, size L or XL,
  • 1 teaspoon of salt,
  • 1 teaspoon of baking soda,
  • 300 g of wheat flour,
  • 300 g of chocolate flakes, chocolate drops or finely chopped chocolate in a slab.

In the bowl of an electric mixer, beat the butter and both types of sugar on medium speed for about 3 minutes, until light and fluffy. Add vanilla and eggs. Continue beating for another 2 minutes.
Add salt and baking soda. Mix briefly until you obtain a uniform consistency.

Add the flour and mix at low speed until the dough is uniform. Add the chocolate pieces and gently mix them in with a wooden spatula.

Cover the bowl with foil and put it in the fridge for a few hours until the dough hardens.

Line a baking tray with baking paper. Scoop the dough with a spoon or ice cream scoop and place the balls on the baking tray, keeping a distance of 5 cm.

Place the chocolate cookies in an oven preheated to 175 degrees Celsius and bake for 11-13 minutes until they are golden on the edges and pale in the center. Remove and leave to cool.

Store cookies in an airtight container at room temperature for up to 3 days.
