- 5 lemons with thick skin,
- 0.5 kg of white sugar,
- a pinch of salt,
- 1-2 tablespoons of freshly grated ginger.
Preparing lemon and ginger jam is very simple.
- First, wash the lemons thoroughly and grate the peel – only the yellow one without the white layer. Then peel the lemons, removing the white peel, and squeeze the juice from the pulp.
- Place the lemon peels in the pot. Cover with water and cook for 10-15 minutes until soft. Strain and cover with cold water for 12 hours.
- Weigh the peels, then place them in a pot and pour half their weight in water. Add sugar and cook for approx. 30 minutes. When the peels become transparent, blend them until smooth.
- Cook the jam over low heat, add grated ginger and lemon juice and stir until it thickens.
- Remove from heat, add salt, mix and transfer to sterilized jars. Turn upside down so the lids catch.
If you like sweeter jams, you can add more sugarbut remember to also increase the amount of water.
When you feel faint, lemon and ginger jam will bring you relief, quickly put you back on your feet and give you energy. Just one spoon a day will slowly feel the difference. You can add it to a sandwich with fresh bread and a little butter. Tastes great as a side dish morning oatmeal, millet or buckwheat flakes.
