Saithe – the name of this fish still sounds mysterious to many people in Poland. It is a species from the codfish family, which owes its intriguing name to the black color of the interior of its mouth cavity. Its taste and structure actually resembles cod. In nature, it occurs mainly in the cold waters of the North Sea, the Norwegian Sea, the Barents Sea and in the western part of the Baltic Sea.
Saithe meat is elastic and juicy, boneless, and has a compact consistency, which makes it resistant to various types of thermal treatment. They can be successfully fried, grilled or baked. Ingredients list:
- 400 g spinach (frozen),
- a spoonful of butter,
- larger onion
- garlic clove,
- 4 tablespoons of thick cream,
- 800 g saithe,
- 5 tablespoons of flour,
- sun,
- pepper,
- oil for frying.
Melt the butter in a small pot, then add the spinach. Add chopped onion and pressed garlic. Simmer over medium heat until the water from the spinach evaporates. Add the cream and simmer for a while – remember to stir constantly so that the sauce does not burn. Season with salt and pepper to taste.
Cut the saithe fillet into equal portions, sprinkle with pepper and salt on both sides. Sprinkle each piece with flour, then fry in your preferred oil until the fish is golden on both sides.
Serve the fried saithe immediately – arrange the fillets on a plate, on top of the spinach. It tastes great with boiled potatoes or fries, as well as with your favorite salad.
