They are perfect for cooking, stewing or frying, and their structure means that they are sometimes used as meat substitute. You can easily buy them in the supermarket or grow them yourself.

They stand out low calorie (only about 30-40 kcal in 100 grams), and at the same time high content of vegetable protein, fiber and minerals. Oyster mushroom soup is the dish I most often make when I need something warming and immune-supporting. It does not require complicated techniques or hard-to-find ingredients – all you need are mushrooms, a few fresh vegetables, spices and broth. The mushrooms soften quickly and give the soup its characteristic aroma, giving the dish a unique flavor. This is a great option when you dream of a hot, filling soup.
Ingredients:
- 300 g oyster mushrooms,
- olive oil for frying,
- 50 ml of warm water,
- 8 teaspoons of soy sauce,
- 2 teaspoons of vinegar,
- 1/2 onion,
- stalk of celery,
- 2 potatoes,
- 1/4 teaspoon dried thyme,
- 4 tablespoons of wheat flour,
- 500 ml of milk,
- 500 ml vegetable broth,
- a teaspoon of salt,
- a teaspoon of black pepper,
- juice of 1/2 lemon,
- parsley for decoration.
How to do it:
1. Clean the oyster mushrooms and cut them into pieces. Heat a tablespoon of olive oil in a pan and fry the mushrooms over medium heat. They should be golden brown.
2. Mix water, soy sauce and vinegar in a bowl. Mix and pour into the mushrooms. Fry them until the liquid evaporates.
3. Peel the onion and chop it into small cubes. Wash the celery stalk and cut it into half-slices. Peel the potatoes and cut them into medium cubes.
4. Heat a tablespoon of olive oil in a large pot. Add the onion, celery, season with thyme and mix. Fry the vegetables until soft. Then add flour a spoonful at a time, creating a roux. Mix everything for a minute.
5. Pour milk and vegetable broth into the pot. Stir until boiling to avoid lumps from the roux. When the liquid starts to boil, add the potatoes and reduce the heat.
6. Cook until the potatoes are soft. When they are ready, put the mushrooms in the pot, season with salt and pepper, and pour in the lemon juice. Mix and cook for another 5 minutes.
7. Serve the oyster mushroom soup hot, decorated with chopped fresh parsley.
