Although an apple sponge cake is one of the simplest cakes, it will be truly delicious when you bake it with care. Spend enough time whipping the egg whites into foam. Mix the remaining ingredients into it with a spatula so that the mixture does not fall. Use hard, sour apples. Cut them into small pieces and press them lightly into the mass. If you like, you can sprinkle them lightly with cinnamon. The sponge cake should be fluffy, soft and golden. Lovers of sweet desserts can decorate it with powdered sugar or a dollop of whipped cream after baking. This is a simple way to make a homemade dessert that always works.
Ingredients:
- 5 eggs,
- 170 g of fine sugar,
- a package of vanilla sugar (16 g),
- 150 g of wheat flour,
- 50 g of potato starch,
- a teaspoon of baking powder,
- 100 g rapeseed oil,
- 2 tablespoons of lemon juice,
- 3 apples,
- powdered sugar (for decoration).
How to do it:
Bring the eggs to room temperature. Separate the whites from the yolks. With a mixer at medium speed, beat the egg whites until stiff. Without stopping whipping, add sugar and vanilla sugar to the foam in batches. Beat the foam for about 10 minutes – until it becomes stiff and shiny.
Gently mix the yolk whites into a foam, then add the flour, starch and baking powder in batches. Mix the dough with a spatula – briefly, just until the ingredients are combined. Finally, mix the oil and lemon juice into the dough.
Wash the apples, peel and cut into eighths or sixteenths.
Grease the bottom of a baking tin, e.g. 18 x 27 cm. Pour the dough into the form and smooth its surface. Spread the sliced apples evenly on the surface of the dough. Gently press them into the dough.
Put the form in the oven preheated to 175°C. Bake for about 40-45 minutes – until the so-called dry stick.
Remove the baked cake from the oven immediately and set aside to cool. When it reaches room temperature, sprinkle it with powdered sugar.
