I’ve always wanted to make it myself gingerbread for Christmasbut its preparation seemed very difficult to me. Nothing could be further from the truth. When I discovered this recipe for the simplest gingerbread in the worldI felt like a real Christmas baking champion. Every year my family asks me to make it.
- 120 g of butter,
- 150 g of brown sugar,
- 4 tablespoons of liquid honey,
- 3 tablespoons of cocoa,
- 1 teaspoon of cinnamon,
- 3 teaspoons of gingerbread spice,
- 200 ml of milk,
- 3 tablespoons of plum jam,
- 4 eggs (size M),
- 280 g of wheat flour,
- 2 teaspoons of baking powder,
- 50 g raisins.
Melt the butter in a pot. Add sugar, honey, cocoa, cinnamon and gingerbread spice to it. Mix all ingredients. Heat for a while over low heat, stirring occasionally, but do not bring the mixture to a boil. Remove the pot from the burner.
Add milk and plum jam to the mixture in the pot. Mix with a whisk until the ingredients are combined. Set the mixture aside to cool.
In a separate bowl, mix the eggs with a whisk. Combine them with flour, baking powder and then with the mixture from the pot. Mix all ingredients with a whisk – just until combined. Finally, mix the raisins into the dough.
Grease and flour a 25 cm long cake tin. Pour the dough into it. Place in the oven preheated to 180°C. Bake for about 45 minutes – until the stick is dry. Set aside to cool completely.
