They call it black gold. These forests are full of them now

When going to the forest, you can fill your baskets with the mushroom that is often referred to as black gold – and not without reason. We usually call the gold of the forests, and the gold that is called black gold is similar to them, except that it has a much darker cap and stem.

It is a very characteristic mushroom that (apart from the color) brings to mind a chanterelle. It reaches a diameter of up to 8 cm, has a trumpet-funnel shape, and the cap has rolled up edges. Young fruit bodies are brown-black, later becoming black-gray. The stem reaches a height of up to 12 cm, is empty inside, and flows smoothly into the cap. The surface is slightly wrinkled. The pulp of the mushrooms is very delicate and has a pleasant smell, it does not have a strong taste, but it absorbs spices very well.

The funnel cake is a very characteristic mushroom and even inexperienced mushroom pickers should have no problem recognizing it, because it is difficult to confuse it with another species growing in Polish forests. Apart from the common name “black gold”, it is also common to call it crow’s ears.

In Poland it can usually be found in mountainous areas. This mushroom can be successfully dried and powdered as an addition to soup. Fresh, it is perfect for mushroom sauce – it goes perfectly with poultry. It can be successfully used as a stuffing for dumplings or dumplings.

However, it is worth remembering that the funnel cake does not have a very distinct flavor – so it requires seasoning. In addition, this mushroom is a good source of many trace elements, it contains a lot of protein, fiber and B vitamins.
