For potato casserole with meat many types of mushrooms can be usedand each of them will slightly change the aroma of the dish. They are the most universal champignons – delicate, easily accessible and quick to process. They give a mild flavor and slight juiciness. They will work well when you want to obtain a meatier structure. However, if – like me – you want an intense, truly forest flavor, go for it boletes or boletes (both fresh and frozen). It is good practice to fry the mushrooms before adding them to the casserole. This way you will evaporate excess water and enhance their flavor, making the whole thing more compact and aromatic.
Ingredients:
- 8-10 potatoes,
- 500 g of minced beef and pork,
- 300 g of forest mushrooms,
- 2 onions,
- 2 cloves of garlic,
- 1/2 teaspoon of cumin,
- 1/2 ground coriander,
- 1/2 teaspoon of sweet pepper,
- 1/2 teaspoon of hot pepper,
- a teaspoon of thyme,
- a teaspoon of oregano,
- salt, pepper (to taste),
- clarified butter (for frying),
- 200 g sweet cream (12%),
- 2 eggs,
- 150 g of yellow cheese.
How to do it:
1. Peel the potatoes and cook until al dente in salted water. When they cool down, cut them into slices about 5 mm thick.
2. Clean the mushrooms and cut into slices. Peel the onion and cut into slices. Chop the peeled garlic cloves.
3. Fry the onion in clarified butter. When they become translucent, add the garlic to the pan, and after a while, the mushrooms. Fry the mushrooms until soft. At the end of frying, season them with salt, pepper, thyme and oregano. Remove from the pan.
4. Add some more butter to the pan. Fry the meat in it, stirring constantly (so that it does not form lumps). While frying, season with cumin, coriander, both peppers, pepper, and finally salt.
5. Mix the cream with the beaten eggs. Grate the cheese on a medium grater and mix it into the cream. Season everything with salt and pepper.
6. Lightly grease the bottom of the ovenproof dish. Cover them with half of the potato slices. Place a layer of mushrooms on the potatoes and a layer of meat on top of the mushrooms. Cover with a layer of the remaining potatoes. Pour the egg, cream and cheese mixture over the casserole.
7. Put the casserole in the oven preheated to 180°C. Bake for about 30 minutes.
