Moskole is a delicacy from Podhale, its name comes from Russian soldiers who stayed in these regions during the partitions. They were made from one of the cheapest and most common ingredients – . They were eaten with various additions. We offer a proven recipe for moskole.
Muscovites are traditionally baked on a baking tray or pan and served with various sauces. In Podhale, it is most often garlic butter, but often it can also be other additions, e.g. mushroom sauce, gzik or herb butter.
To prepare moskole, you will need:
- 1 kg of boiled potatoes,
- 2 cups of wheat flour
- 1 larger egg,
- 150 ml of curdled milk,
- 1 teaspoon of salt.
Optionally, you can also use a tablespoon of butter and pepper to give them a more distinctive flavor. What’s important It is better to cook the potatoes the day before and only then prepare the moskole – but if you don’t have time, you can also use freshly cooked potatoes.

Boil the potatoes and press them through a ricer or crush them with a pestle. Add salt, egg and butter to the cooled potatoes. Then add flour and knead the dough. The mass should be soft but not sticky. Divide the dough into approx. 10 balls and flatten them into 1.5 cm thick pancakes. Then heat a large frying pan – dry fry them for a few minutes on each side. The burner power should be medium – if the moss is too high, they will burn on the top and be undercooked in the middle.
