Yeast wreath with pesto and cheese is an interesting and aromatic baked product that will be a great alternative to classic bread. Perfect for breakfast or dinner, but also as an addition to soups or main dishes. You can prepare it for the upcoming St. Andrew’s Day, all your guests will surely like it.
To prepare this recipe, you will need:
- 150 ml of warm milk,
- 2 teaspoons of instant yeast,
- 2 tablespoons of honey,
- 3 eggs, size L or XL,
- 500 g of wheat flour,
- 1 teaspoon of salt,
- 2 tablespoons of soft butter,
- 6 tablespoons of basil pesto,
- 2 cloves of garlic,
- 100 g grated parmesan cheese,
- 2 tablespoons of fresh thyme,
- 1 tablespoon of fresh sage.
In a mixer bowl, mix milk, yeast, honey, eggs and flour. Using a dough hook, mix everything into a uniform dough for 4-5 minutes. Add the butter and mix again for 2-3 minutes until combined. If the dough is not elastic and still sticks to your hands, gradually add a spoonful of flour and knead continuously.
Cover the bowl with the dough with plastic wrap and set aside at room temperature for an hour or until it doubles in size.
In a separate bowl, mix basil pesto, pressed garlic and chopped fresh herbs.
Place the dough on the counter and punch it down a few times. Then roll them out on a floured surface into a rectangle measuring approximately 30×45 cm. Spread the pesto mixture evenly over the dough and sprinkle with Parmesan cheese. Roll them into a tight roll along the longer side. Gently press the roll against the countertop, flattening it.
Using a sharp knife, cut the roll in half and expose the inside. Twist both rolls of dough together and then shape them into a wreath. Transfer everything to an oven tray lined with baking paper. Cover and set aside in a warm place for about 45 minutes.
Place the yeast wreath with pesto and cheese in an oven preheated to 175 degrees Celsius for 30-35 minutes until the top is golden brown.
Serve the cake warm, preferably spread with additional butter.
