I make minced cutlets according to my grandmother's recipe. One addition makes them juicier and softer

Minced cutlets are a true classic in Polish cuisine. How to prepare them to recall the flavors from years ago?

Ingredients:

  • 500 g of minced pork
  • kaiser roll
  • egg
  • onion
  • half a teaspoon of marjoram
  • 4 tablespoons of breadcrumbs
  • salt and pepper to taste
  • an additional glass of milk
  • butter or lard for frying

How to do it:

Pour milk over the kaiser roll. Leave for a few minutes, then drain by squeezing gently with your hands. Transfer it to a large bowl. Peel the onion, chop it and fry it over medium heat in a pan with butter.

Add minced pork and fried onion to the bowl. Add the egg, season with marjoram, salt and pepper. Mix the mass thoroughly with your hands, kneading it like dough.

Form minced cutlets and coat each of them in breadcrumbs. Fry in fat on each side for a few minutes until golden.

Although I traditionally add bread to the cutlets, from time to time I also experiment with other ingredients. Few people know that bread is not needed – you can prepare ground bread from only meat, onion, eggs and other products. The mass will stick anyway.

A tasty addition that will turn the classic minced meat from grandma’s recipe into a more modern one is, for example: mustard – it will bind the mass and give an interesting flavor to the dish. I always add a teaspoon of this thick sauce – the minced meat is incredibly juicy and tender.

If you like new things, replace the bun with barley or buckwheat groats. After cooking, cool it and mix it with the meat and other additives. They will work just as well oat flakes – just pour boiling water over them, wait until they swell and mix with the rest of the ingredients.
