Chef Roman Paulus presented a real Karlovy Vary dumpling with herbs, which is cooked for 20-25 minutes

Karlovy Vary dumpling is one of the pearls of Czech cuisine, and Roman Paulus elevates it to a completely different level in his version. Although these dumplings look festive, their preparation is surprisingly simple and anyone can make them at home.

Dumplings from Karlovy Vary are traditionally served with sauces or stews. Their secret lies in the fact that they are prepared without flour: the main role is played by white bread, which, in combination with butter, eggs and milk, creates an unusually fluffy structure. Roman Paulus adds the aroma of fresh parsley and nutmeg, which give the dumplings a typical delicate taste.

Karlovy Vary dumpling recipe

Ingredients:

– 400 g of older white bread
– 250 ml of whole milk
– 150 g of butter
– 4 M-sized eggs
– salt
– a pinch of nutmeg
– chopped parsley leaves

Procedure:

1. Cut the pastry into small cubes and place in a bowl. Add salt and chopped parsley and nutmeg.

2. Pour in lukewarm milk and melted butter, then mix everything thoroughly. Stir in more egg yolks and finally gently fold in the snow from the egg whites.

3. Place the bowl with the dough in the refrigerator for five minutes to cool the mixture slightly.

4. Spread the dough on the food foil, shape into a roll, wrap tightly and secure the ends. Wrap the prepared roll in aluminum foil.

5. Place the dumpling in boiling water and cook for 20-25 minutes depending on the size. Turn the dumpling halfway through.

6. After cooking, unwrap, cut into slices and serve immediately.
