Where did the tradition of serving carp on the Christmas Eve table come from? This custom became popular in the times of the Polish People’s Republic, when access to many goods was limited. At the same time, large-scale carp breeding was quite simple and cheap. Interestingly, in 1947, the promotional slogan “Carp on every Christmas Eve table in Poland” appeared, which encouraged people to eat carp and quickly became embedded in people’s minds. Additionally, in some workplaces, fresh carp was treated as a Christmas bonus for employees.
Many people appreciate the traditional taste of carp and enjoy eating it during Christmas. However, frying carp for Christmas Eve is increasingly being abandoned in favor of other fish that are not only tastier, but also much easier to prepare. A good choice will be, among others burbot, its advantage is its low bone content and delicate meat that does not have the undesirable smell of mud. Thanks to this, you will convince even the youngest picky eaters to eat it.
Burbot is a fish belonging to the cod family and lives in fresh waters, clean rivers and lakes. In Poland, it can be found in Masuria, in the Vistula and Szczecin reservoirs. It is characterized by a large flattened head, its body usually grows up to 60 cm in length. You can recognize it by the marble pattern on its back.
Burbot can be classified as healthy fish. Its meat is a good source of proteini.e. the basic building material of the body. Eating the right amount of protein helps ensure muscle regeneration and supports the condition of the skin. Additionally, meals rich in proteins fill you up for longer, which reduces the urge to snack.
Burbot meat also contains vitamins and minerals, including:
- vitamin Awhich supports eye health, skin condition, and has antioxidant properties,
- B vitamins beneficial effect on the circulatory, nervous and muscular systems,
- calcium and phosphoruswhich strengthen bones and teeth, reduce the risk of osteoporosis and caries,

Of course, remember that the method of preparation also influences the calorie content. Therefore, if you are trying to lose weight, instead of frying it in a large amount of fat, bake the fish in the oven.
What’s the best way to prepare burbot? This fish is suitable for frying, cooking and baking. A tasty proposition for burbot for Christmas Eveit will be baked in breadcrumbs in the oven.
Ingredients:
- 500 g burbot fillets,
- salt and pepper to taste,
- 1-2 teaspoons of dried parsley,
- 1 egg,
- flour and breadcrumbs for breading,
- olive oil.
Preparation:
- Divide the cleaned fillets into smaller pieces.
- Sprinkle the fish with dried parsley, salt and pepper.
- Coat the burbot fillets in flour, beaten egg and breadcrumbs.
- Place the prepared fish on baking paper.
- Sprinkle the tops of the breaded pieces with olive oil.
- Bake in an oven preheated to 180 degrees for approx. 25-30 minutes until golden brown.
- Finally, sprinkle with lemon juice.
