Herring tolerates marinating, storing and combining with various additives very well. The rolls meet all these assumptions and also look very impressive.
They are also distinguished by the fact that they do not require many hours of preparation. Enough a short processing of the ingredients, rolling the rolls, cooling them for a while and the snack is ready. This makes the cold dish suitable for both small social gatherings and large parties.
I will add that herrings are incredibly healthy. They contain plenty of omega-3 fatty acids and vitamins and minerals such as iodine, iron and zinc. This is important for people who like to eat healthily and provide nutritious food to their loved ones.

Ingredients:
- 16 matias herring sheets, well rinsed and drained,
- red pepper, cut into thin strips,
- small shallot, finely chopped,
- 16 pitted green olives, preferably slightly salty,
- 1/2 teaspoon of pepper (you can use freshly ground),
- a tablespoon of apple cider vinegar or lemon juice,
- a teaspoon of cold-pressed linseed or rapeseed oil,
- fresh dill for decoration,
- optional: 1/2 teaspoon of French mustard for a distinctive accent at the end.
The recipe is simple, but requires care in rolling. Thanks to this, the rolls will keep their shape and you can easily arrange them on a platter.
1. Preparation of herrings
Rinse the matias sheets well in cold water and immerse them in a bowl of water mixed with a little milk for 30-40 minutes. This treatment gently softens their taste, but does not take away the characteristic saltiness. After draining, dry them with a paper towel.
2. Aromatic base
In a small bowl, combine shallot, pepper, apple cider vinegar and linseed oil. If you want a more intense aroma, add French mustard. This mixture will emphasize the flavor of the fish, but also add freshness.
3. Arranging the ingredients
Place each herring slice gently on a flat surface. Spread a thin layer of marinade, add a strip of pepper and one green olive. Roll the herring starting from the narrower end so that the filling is well embedded.
4. Stable rolling
It is best to fasten the rolls with a toothpick or a small decorative snack pin. This will prevent them from expanding during cooling or serving.
5. Cooling
Place the finished rolls tightly in a glass container and place in the refrigerator for at least an hour. This time allows the flavors to meld and deepen.
6. Submission
Just before serving, decorate each roll with fresh dill. It is not only a decoration – it adds a pleasant aroma and lightness.
Herring rolls in the version I proposed is distinguished by a delicate marinade that does not dominate the herring, but enhances its natural flavor.
