I added one ingredient to the pancakes and it changed everything. They are the best, my family eats them up

I love pancakes and I also like to experiment with different fillings. One day I thought it would be interesting to add a bit of spinach to the dough – it will greatly enrich the taste of the pancakes, and spinach is very healthy.

As it turned out, it was a great idea. Sometimes I eat these pancakes alone with yogurt, sometimes I add a filling filling. They are always delicious.

  • 250 g of wheat flour,
  • 350 ml of milk,
  • 120 ml of sparkling water,
  • 2 eggs, size L or XL,
  • 150 g of spinach leaves – fresh or frozen,
  • 1 teaspoon of olive oil,
  • ½ teaspoon of salt.

Additionally:

If you are using fresh spinach, wash the leaves and blanch them briefly in boiling water for about 1 minute. Strain, cool and squeeze out excess water very carefully. However, if you have frozen leaves, thaw them and drain them very well as well.

Chop the spinach very finely with a sharp knife or food processor. Pieces of leaves should be clearly distinguishable and must not become a uniform mass.

Add milk and eggs to the bowl. Add the spinach and mix everything until uniform.

Sift flour and salt into a separate bowl. Gradually pour the liquid into the flour, stirring vigorously with a whisk until all lumps are dissolved.

Finally, add olive oil and sparkling water. Mix until smooth.

Set the dough aside for 15-30 minutes.

Heat the pan over high heat. Brush it with a very small amount of oil. Pour a ladleful of dough and spread it evenly over the entire surface. Fry the pancakes for about 1-2 minutes on each side, until nicely browned.

Place the finished pancakes with spinach in layers on a plate. Serve warm with various fillings and additions.
