If ripe bananas have been waiting in your fruit bowl for a long time, it’s a sign to prepare spice cake with bananas and dried fruit. Perfect when it’s cold outside. It goes perfectly with warming tea with honey and introduces the aroma of the quickly approaching Christmas.
Before you start baking, prepare the appropriate form. It will work well cake tin with a diameter of 24 cm.
To prepare this recipe, you will need:
- 3 medium bananas,
- 3 eggs,
- 150 g of brown sugar,
- 160 g of vegetable oil,
- 150 g of wheat flour,
- 70 g of almond flour,
- 1 tablespoon of cocoa,
- 1 teaspoon of cinnamon,
- ½ teaspoon of ginger,
- ½ teaspoon of nutmeg,
- 1 teaspoon of baking soda,
- a pinch of salt,
- 100 g of dried fruit (almonds, raisins, etc.),
- 30 g of dark chocolate.
Blend 2 bananas into a puree. Cut the third banana into slices.
Combine eggs with sugar and bananas. Mix until uniform. Without stopping mixing, pour the oil into the mixture in a thin stream.
Sift both flours, cocoa, spices and baking soda into a separate bowl. Mix a pinch of salt into loose products.
Add the dry products to the egg mixture in batches. Mix briefly – just until the ingredients are combined.
Pour the dough into a greased and floured cake tin with a diameter of 24 cm. Level the surface of the cake. Sprinkle it with banana slices and dried fruit. Push them inwards slightly.
Put the cake in the oven preheated to 175°C. Bake for about 50 minutes – until the stick is dry.
Sprinkle chopped chocolate on the hot cake. Set aside to cool
