Spice cookies are a great substitute for traditional gingerbreadespecially when there is not enough time for the dough to mature for a long time. They are tender, aromatic and ready to eat almost immediately after baking. They will be perfect as a gift for St. Nicholas Day or under the Christmas tree. Their characteristic, beautiful smell (of spices) fills the house just like classic gingerbread, and at the same time preparation only takes a moment. This is a simple way to bring Christmas atmosphere to the kitchen.

Ingredients:
- 200 g of wheat flour type 450 + a little for sprinkling,
- 100 g of butter,
- 50 g sugar,
- 30 g of liquid honey,
- egg,
- 2 teaspoons of spices or gingerbread spices,
- a teaspoon of dark cocoa.
How to do it:
1. Place the soft butter in a bowl and beat with sugar until fluffy. You can use a mixer or spoon. Beat the egg, pour in the honey and mix thoroughly.
2. Sift the flour, spices and cocoa into a bowl. Mix everything with a spoon until the ingredients are combined, then knead with your hands into a smooth, soft dough.
3. Place the dough on a countertop sprinkled with flour, form a ball and wrap in foil. Chill in the refrigerator for at least 30 minutes, which will make it easier to roll and cut out the cookies.
4. After cooling, roll out the dough to a thickness of 3-5 mm. The thinner they are, the more brittle and hard they are. Cut out your favorite shapes, e.g. stars, hearts, Christmas trees or classic circles.
5. Place the cookies on a baking tray lined with baking paper. Bake at 180°C for 8-12 minutes until the edges are lightly browned.
6. After baking, cool on a rack. Store in a tightly closed container or can. After a few days, they will become even more aromatic and tender.
