Crispy chicken bites are a home-made version of the popular fast foodbut prepared from simple ingredients and without artificial additives. These are pieces of chicken breast coated in crispy breading, which, after frying, taste like those from the most famous restaurants. They are perfect for parties – from St. Andrew’s Day to New Year’s Eve – but also home-made fast food for a movie night. It is a great alternative to highly processed food (especially for children and teenagers), because you know exactly what’s in the dish. They are crunchy, taste delicious to almost everyone and always disappear from the table quickly.
Ingredients:
- 500 g chicken breast,
- 200 ml buttermilk,
- 150 g breadcrumbs,
- 60 g of corn flour,
- 1.5 teaspoons of salt,
- a teaspoon of granulated onion,
- a teaspoon of granulated garlic,
- a teaspoon of smoked paprika,
- 1/2 teaspoon of black pepper,
- 1/4 teaspoon cayenne pepper.

How to do it:
Wash and dry the chicken. Cut it into pieces of approximately 2.5 cm. Put them in a bowl and pour buttermilk over them. Mix everything and set aside for at least an hour.
In a small bowl, mix the cornstarch and all the spices.
Place the chicken in a large string bag along with the spices. Close the bag and shake it well to coat the pieces with the mixture.
Using a fork, remove the chicken pieces from the ziplock bag and dip them again in the buttermilk and then in the breadcrumbs. Press well so that the breading sticks to the meat.
In a medium frying pan, heat the oil for deep frying to 175 degrees Celsius. Add the breaded chicken in batches and fry for about 2 minutes on each side, until nicely browned.
Remove the crispy chicken bites with a slotted spoon and place them on a plate lined with paper towels.
Serve the dish warm, immediately after preparation. Reheated chicken pieces will no longer be as crispy.
