Last weekend, my mother served sponge cake with oil. It was moist, with a hint of espresso, and the coffee glaze complemented the whole perfectly. I liked it so much that I asked her for the recipe. From now on it will be a frequent guest on my table.
It does a great job in coffee cake. It enhances the coffee flavor and introduces spicy notes. That’s why this baked product fits perfectly into the Christmas menu.
What ingredients do we need to make coffee cake? We divided them into 3 parts.
Ingredients for the cake:
- 3 eggs at room temperature;
- 250 g of wheat flour;
- 150 g of sugar;
- 120 ml rapeseed oil;
- 100 ml of strong, cooled coffee;
- 10 g baking powder;
- 5 g of baking soda;
- 5 g of cardamom;
- 5 ml of vanilla extract;
- a pinch of salt.
Ingredients for the coffee glaze:
- 150 g of powdered sugar;
- 60 ml of strong, cold coffee.
Decoration:
- chopped nuts;
- grated dark chocolate;
- candied orange peel.
First, make the dough – start beating the eggs with sugar for about 5 minutes until the mixture is light and fluffy. Pour the oil into it in batches, constantly mixing.
Then pour the cooled coffee and vanilla extract into the dough and mix gently. In turn, sift the dry ingredients into a separate bowl, i.e. wheat flour, baking powder, baking soda, cardamom and salt.
Start gradually adding the dry products to the bowl with the wet ones, gently mixing everything with a spatula or beating with a mixer at low speed until the ingredients are combined.
Pour the prepared mixture into a 22 cm diameter cake tin lined with baking paper. Tap it gently on the counter to even out the surface of the cake and remove air bubbles. Bake them in an oven preheated to 180 degrees with the top-bottom option for about 35 minutes, until the stick is dry.. After baking, leave the cake on a rack to cool.
In the next step, make the coffee glaze. To do this, sift the powdered sugar into a bowl and slowly pour cold coffee into it – a uniform, slightly flowing mass must be created. Spread it on the top and sides of the coffee cake.
Finally, decorate them with any additions you like. My mother decorates the cake with chopped nuts, grated dark chocolate and candied orange peel.
