Unusual dessert for Christmas. Snowdrifts vanilla cake

Snowdrift Cake it is delicate, effective and exceptionally creamy. Although it looks complicated at first glance, it is very easy to make. All thanks to ready-made sheets puff pastrywhich significantly improve work. Crispy tops go perfectly with vanilla creamwhich, thanks to the addition of vanilla seeds, honey, egg yolks and butter, has a great consistency and deep flavor. It is worth using a pastry bag to decorate, thanks to which the dessert will look beautiful. It will be perfect for the Christmas table.

To prepare this recipe, you will need:

  • 2 sheets of puff pastry
  • 1 yolk
  • 30 ml of cream 30 percent

Ingredients for vanilla cream:

  • 1 liter of milk,
  • 2 vanilla pods (or 1 teaspoon of extract),
  • 200 g egg yolks,
  • 300 g sugar,
  • 40 g of corn starch,
  • 500 g of soft butter,
  • 25 g of previously soaked gelatin,
  • 80 g of honey.

Unroll the puff pastry and place it on two large oven trays. Mix the yolk and cream in a bowl and brush over the top of the cake. Cover each sheet with a baking tray (to prevent it from rising). Bake at 200°C until golden. Repeat the same with the second sheet – you will get two tops.

Prepare the vanilla cream. Pour the milk into a large pot. Cut the vanilla pods lengthwise, scrape out the seeds and add them to the milk along with the pods. Boil.

In a large bowl, beat the yolks with sugar and starch until light and fluffy. Slowly pour in the hot vanilla milk, stirring constantly. Pour the mixture into a pot and bring to a boil over low heat, stirring constantly. When it reaches a thick, custard-like consistency, remove from heat. Pour into a bowl and set aside until cool.

Cut the butter into small cubes. Add the soaked gelatin to the warm cream and stir until it dissolves.

Gradually add the soft butter, mixing constantly. When the cream thickens, add honey and mix again. Set aside until it cools slightly and starts to hold its shape.

Divide the cream into two parts.

Place the first part on the first layer of puff pastry. Cover with the second layer. Spread the second part of the cream on top (you can use a pastry bag for decoration).

Place the dough in the refrigerator for at least 4 hours, preferably overnight.
