Recipe for herbal Advent soup
Raw materials:
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, chopped
- 2 carrots, cut into rounds
- 1 parsley, diced
- 1/2 celery, diced
- 1 liter of vegetable broth
- 1 teaspoon of dried thyme
- 1 teaspoon dried sage
- 1 teaspoon of dried rosemary
- salt and freshly ground black pepper to taste
- fresh herbs for garnish
Procedure:
- Heat the olive oil in a saucepan and fry the onion until golden. Add the garlic and fry briefly.
- Add the chopped carrots, parsley and celery and stir for about 5 minutes to soften the vegetables slightly.
- Pour the broth over the vegetables, add thyme, sage and rosemary. Bring the soup to a boil, then lower the heat and simmer for about 20 minutes, until the vegetables are tender.
- Salt and pepper the soup to taste. For a smoother texture, you can blend part of the soup with a stick blender.
- Serve hot, garnished with fresh herbs. It goes great with a piece of fresh bread or a homemade baguette.
