​Autumn superfood salad. The pants will immediately become loose around the waist

Jerusalem artichoke, also called Jerusalem artichoke, was popular in Poland even before potatoes came to us. Today it is back on tables as a healthier, lighter and more valuable alternative.

This quick dish is perfect for both dinneras and as stand-alone snack. All you need are basic products that you can easily buy in most stores. Ingredients:

  • 2-3 Jerusalem artichoke tubers,
  • 1 carrot,
  • 1 apple,
  • juice of half a lemon,
  • 1 tablespoon of olive oil,
  • salt and pepper to taste,
  • optional: 1 teaspoon of honey.

This mixture not only tastes great, but also keeps you full for a long time fiber and supports the intestines thanks to natural inulin contained in Jerusalem artichoke.

Wash thoroughly Jerusalem artichoke, peel it and grate it with large eyes. Then grate apple and carrotthen sprinkle everything immediately with lemon juice to maintain the bright color of the ingredients. Mix vegetables and fruits in a bowl, pour olive oil over them, and if you want a delicate sweetness, add honey. At the end season with salt and pepperthen mix the entire salad thoroughly.
