Cinnamon cheesecakeas the name suggests, is a combination of two beloved desserts. It contains a classic, creamy cheese mass and an aromatic, spicy cinnamon massknown for its popular cinnamon sticks. Although there is no yeast dough, the characteristic notes of cinnamon, brown butter and sugar create exactly the same warming atmosphere. Thanks to this, an ordinary cheesecake gains a completely new and more expressive character. It will be perfect in winter and for the holidays. This is an ideal proposition for those who love spicy baked goods, but at the same time do not like baking yeast-based baked goods.
Ingredients:
Bottom:
- 150 g of biscuits,
- 100 g of butter,
- 2 tablespoons of sugar,
- a teaspoon of ground cinnamon.
Cheesecake:
- 1 kg of cream cheese or cheese from a bucket,
- 120 ml whipping cream,
- 120 g of fine sugar,
- 3 tablespoons of vanilla pudding,
- 2 eggs,
- yolk,
- teaspoon of vanilla extract.
Filling:
- 180 g of brown sugar,
- 80 g of butter,
- 2 teaspoons of ground cinnamon.
How to do it:
1. In the beginning prepare the base. Crumble the biscuits using a food processor or a rolling pin and a tight bag.
2. Melt the butter. Mix them with biscuits. Add sugar and cinnamon. Mix everything thoroughly, it should have a crumbly consistency. Fill the bottom with baking paper. The cake tin should be quite large (approx. 28-30 cm in diameter). Press the edges well and set aside.
3. Make the cheese mass. Mix cream cheese or cheese from a bucket with sugar and pudding until smooth. Then add 2 eggs and 1 yolk. Mix briefly. Finally, add vanilla and gradually pour in the cream. Mix on low speed until everything is combined. Set aside for a while.
4. Now make the cinnamon filling. Melt the butter until it is liquid. Add sugar and cinnamon to it. Mix everything well.
5. Now assemble the cinnamon cheesecake. Pour 1/3 of the cheese mixture onto the bottom. Do it evenly. Make 3-4 dollops of the filling and spread it with a spoon over the cheese mass layer. It may be uneven.
6. Pour in the remaining cheese mixture. Now put the filling into a pastry bag. Use it to make cinnamon spirals, several on the sides and one in the middle.
7. Place the form in the oven preheated to 170°C. Place a vessel filled with water at the bottom of the oven to create more steam. Bake for about 50 minutes. Open the door and leave the cheesecake in the oven for about an hour to cool down.
