Christmas Mole Mound is a dessert inspired by a classic cake with a cocoa base, whipped cream and bananas, formed into a characteristic mound. This time, however, yellow fruits give way to cherries – you can use pickled or frozen ones. They will introduce a pleasant sour note and beautifully contrast the sweet cream. Such a cake looks extremely impressive and can easily replace traditional poppy seed cakes or cheesecakes during Christmas Eve. If everyone bakes the classics, go crazy and bring your own version of Mole Mound. And if not for Christmas Eve, then perfect for Boxing Day or New Year’s Eve. Your family and invited guests will be delighted.
Ingredients:
Ingredients for the cake:
- 2 eggs,
- 80 g of butter,
- 100 g of dark chocolate,
- 125 ml of milk,
- 150 g sugar,
- 150 g of wheat cake flour,
- 1 teaspoon of baking powder,
- 1.5 tablespoons of dark cocoa.
Ingredients for the cream:
- 500 ml whipping cream (36%),
- 4 tablespoons of powdered sugar,
- 250 g mascarpone serka,
- 80 g of dark chocolate,
- 300 g seedless cherries.
How to do it:
1. Melt the butter and broken chocolate in a pot. Heat over low heat, stirring constantly – until the ingredients are combined. Remove the pot from the burner. Add milk to the resulting sauce. Mix. Set aside to cool.
2. Beat the eggs with sugar until light and fluffy. Sift flour, baking powder and cocoa into a separate bowl. Mix the dry ingredients thoroughly.
3. Using a mixer at low speed, mix the egg mixture with dry products and chocolate sauce. Mix just until ingredients are combined.
4. Pour the dough into a greased and floured cake tin with a diameter of 24 cm. Place in the oven preheated to 175°C. Bake for about 25 minutes – until the stick is dry.
5. After the cake has cooled, scoop out the center (leave the bottom and edges). Crumble the hollowed out dough.
6. Whip the heavily cooled whipping cream with powdered sugar. When it is stiff, mix it with mascarpone cheese and chocolate grated on a medium grater. Finally, mix with cherries (you can use frozen or pickled fruit).
7. Pour the cream onto the bottom of the cake, forming a mound. Sprinkle the mound evenly with crushed dough.
8. Place the Christmas Mole Mound in the fridge for a few hours.
