Herring in tea is a dish that only a few people prepare on holidays in Poland. For many people, the very idea of ​​serving it in this version seems to be a culinary heresy, but those who have already dared to try it, usually include it in their menu permanently.

That’s because it tastes, smells and looks really good. This unique marinade is a great alternative to popular variants of this dish in oil or cream. Especially if, in addition to earl gray bags, you also add citrus fruits.

Herring with tea and citrus is a real hit. Fish for the holidays in this version will positively surprise your guests and will disappear from their plates before you know it. It has a fresh, delicate taste that is like a feast for the palate.

Thanks to tea and lemon or grapefruit peels, the characteristic smell of herring will no longer be so intense. They will also gain a more interesting color and delicate fruit aroma. The marinade is slightly refreshing, so on Christmas Eve everyone who tries this dish will feel as if they were eating in a five-star restaurant.

Recipe for herring in tea – ingredients:

  • herring (herring flakes, e.g. in oil) – 200 g
  • tea in earl gray bags – 2/3 pieces
  • onion – 1 piece
  • honey – 2 tablespoons
  • grapefruit peel – 2 pieces
  • lemon peel – 1 piece
  • oil – as desired
  • salt and pepper – as desired

At first, exactly Soak the herring flakes in water to remove excess salt. You need to cut them into thin strips, about 2-2.5 cm long, and put them in a bowl. Then add honey and mix so that the “liquid gold” slightly sticks to them.

Place the herrings in a jar along with 2-3 tea bags. Pour oil over them, close the jar and put it in the fridge overnight. The next day, remove the tea, add the onion and citrus peel (lemon, grapefruit, and if you want, also orange). Season with salt and pepper. Place back in the fridge overnight and they will be ready to serve in the morning.
