You no longer have to decide what to bake for the holidays this time – cheesecake or poppy seed cake. It is possible to combine it into one delicious dessert. The first time I made this one cheesecake with poppy seedsI already knew it would be a Christmas hit. I wasn’t wrong, I’m doing it again this year.
Ingredients for the cake:
- 250 g of wheat flour,
- 50 g of powdered sugar,
- 125 g of cold butter,
- 1 tablespoon of sugar with vanilla,
- a pinch of salt,
- 2 yolks.
Ingredients for the crumble:
- 100 g of wheat flour,
- 70 g of cold butter,
- 50 g of sugar.
Ingredients for the cheese and poppy seed mass:
- 125 g poppy seeds (unground),
- 150 g of sugar + 3 tablespoons,
- 1 kg of the cheese twalm,
- 200 ml sour cream (12%),
- 1 package of sugar-free vanilla pudding (40 g),
- 1 tablespoon of sugar with vanilla,
- 4 eggs.
Prepare the dough. Sift the flour and powdered sugar onto the pastry board. Add diced butter, sugar with vanilla and salt. Chop the ingredients with a knife. Add the yolks and knead the mixture into a uniform dough. Line the bottom and side (about halfway up) of a 26 cm diameter cake tin. Put it in the fridge.
Prepare the crumble. Combine all ingredients in a bowl (butter – finely chopped). Do not knead them, but rub them with your fingers until you obtain a dough with a lumpy consistency. Place the bowl in the fridge.
Prick the cooled bottom of the cake with a fork. Line a baking tray with baking paper and pour dry beans into it. Place the cake tin in the oven preheated to 185°C. Bake for 12 minutes. Remove the weight and bake for a few more minutes until the cake is golden brown. Remove the pan from the oven, but do not turn it off.
In the meantime, prepare the cheese and poppy seed mixture. Combine poppy seeds with 3 tablespoons of sugar and blend or grind.
In a separate bowl, combine the cottage cheese, cream, remaining sugar, pudding powder and sugar with vanilla. Mix the ingredients thoroughly. Without stopping mixing, add one egg to the mixture. Mix until the ingredients are combined into a uniform whole. Mix the resulting mass with poppy seeds.
Pour the cheese and poppy seed mixture onto the baked base. Sprinkle the crumble evenly on top. Place the cheesecake in the preheated oven. Bake for about an hour.
Cool the cheesecake in the oven with the door slightly ajar. When completely cool, chill in the refrigerator.
