  1. Grind or chop the figs thoroughly until a thick mass is obtained.
  2. Add almonds, rosemary, fennel, juice and alcohol. Mix and knead until the ingredients are well combined.
  3. Form small discs or rolls.
  4. Dry in the oven at 80 degrees Celsius for 40-60 minutes, with the door ajar.
  5. Cool and store in airtight containers.

Cookies prepared in this way can be kept for weeks, and over time they become even more aromatic.
