Paseczkowa salad is a great idea for holidays and larger home parties. It looks flashy, though it is extremely simple to make. Its name comes from the fact that all ingredients are cut into long, thin strips – zucchini, fried chicken, yellow cheese and fresh chives. Added to this is a quick dressing of olive oil and balsamic vinegar, and the whole thing is refreshed by the addition of greens. The ingredients are easily available in every grocery store, and preparing the salad only takes a moment. Guests are usually surprised by the way it is served, while the taste itself is well known and liked.
Ingredients:
- 2 young zucchinis,
- 300 g chicken fillets (boiled),
- 150 g of mild-tasting yellow cheese,
- a few sprigs of chives,
- 4 tablespoons of olive oil,
- 2 tablespoons of balsamic vinegar,
- a few leaves of fresh mint or basil.
How to do it:
1. Wash the zucchinis and cut off the ends. Using a vegetable peeler, cut the zucchini into long, thin strips.
2. Roll a few of the prettiest strips into rolls. Cut the remaining ones into thinner strips.
3. Tear the cooked chicken fillets with your fingers or cut them into thin, long strips. If the meat is dry, you can sprinkle it lightly with olive oil.
4. Use a peeler to cut the cheese into thin slices. Make rolls from some of them and cut the rest into strips.
5. Cut the chives lengthwise and then in half into strips. Cut into several pieces.
6. In a small bowl, combine the olive oil and balsamic vinegar. Season with salt and pepper. Chop the herbs (mint or basil) and add. Mix.
7. In a large bowl, combine zucchini strips, chicken and cheese. Pour the sauce over everything and mix gently so that the ingredients combine but do not lose their shape.
8. Place zucchini and cheese rolls on top for visual effect. Decorate with fresh mint or basil leaves.
